Matcha is won by a special cultivation and harvest technique from the tea plant Camellia sinensis. Unlike the cultivation of standard green tea, the tea plant is kept in the shades for up to 20 days before harvest, which boosts the production of Alpha-Theanine and Chlorophyll. After harvest the leaves are laid out flat to dry and afterwards deveined, destemmed and stone ground. The grinding process is very slow to prevent heat and oxidation of the tea which would destroy the aroma.

Ceremonial grade:Â Highest quality Matcha, allowed for the Japanese tea ceremonies. Handpicked and selected quality ground almost always by granite stone mills to very fine particles in the range of 10 microns (100 particles have the thickness of a human hair). The aroma is superior and feasible for the thick âKoichaâ (3.75g per 75ml water) as it is used in the Japanese tea ceremony.
Premium grade:Â High quality Matcha feasible for daily consumption. Selected quality from young tea leaves. Tastes well in the thinner âUsuchaâ (1.75g per 75ml water) but may sometimes taste grassy and bitter in the thicker Koicha.
Culinary grade:Â Average quality Matcha. Suitable for cooking. It may sometimes taste bitter in Usucha and is not feasible for Koicha.
